About
What is Dubai chocolate?
Dubai chocolate is a chocolate bar filled with kunafa, the shredded pastry used in Middle Eastern desserts, bound in a sweet pistachio cream. Born in Dubai and made famous online, it is now copied everywhere. Ours is made here, in the city that gave it its name, by chocolatiers trained in the French tradition.
The Forrey & Galland Dubai chocolate bar
We toast the kunafa in butter until it shatters, fold it into a cream made from the nuts themselves rather than a flavoured paste, and seal it in a thick shell of fine couverture. The result is a kunafa chocolate bar that stays crisp from the first square to the last. Three recipes: Pistachio, the original; Praline, with caramelised hazelnut; Speculoos, with spiced biscuit.
