Our DNA
A Maison of travel
Since 1912, Forrey & Galland has set out to meet the flavours and treasures of the world, to marry them with French savoir-faire — and to offer them as one brings home a treasure.
- I
Set out
From the cocoas of the tropics to the flowers of the Alps, the Maison was born curious about the world.
- II
Blend
In Dubai, French chocolate meets rose, Omani halwa, dates, pistachio and kunafa. Two cultures, one standard.
- III
Return
One day, to bring every flavour home to Paris and open a boutique there — the journey back to where it all began.

Some houses sell more than chocolate. They offer a way of receiving, of giving and of remembering. Forrey & Galland is one of them.
Chapter I
Paris, 1912
In the Belle Époque, the Maison opened its doors in the most elegant quarter of Paris: the rue du Faubourg Saint-Honoré, among embassies, couture houses and private mansions.
Behind its carved façade, every chocolate was shaped by hand. Forrey & Galland soon became a reference in Parisian chocolate — an address passed from one connoisseur to the next.
The painted sign above the door praised its cocoa as “the only one permitted to the sick” — in an age when cocoa was thought to restore strength.

Chapter II
A journey of flavours
Long before anyone spoke of a journey of flavours, the Maison paired chocolate with the scents of the world — cocoa from the tropics, flowers from the Alps, spices and fruit from afar. By 1914, it had houses in Lyon, Vichy, Aix-les-Bains, Menton, Grenoble and Bordeaux, the spa and resort towns of elegant society.

The Daisies
Les Marguerites. Flower-shaped pralines that became a signature of the Maison.

- 03
The Pastillettes
Fine chocolate discs, to be savoured like a secret.
- 04
Chocolate of the Tropics
A box of twelve bars, conceived as a voyage to the lands of cocoa.

Chapter III
The art of giving
“Gifts signed Forrey-Galland are tasteful and distinguished, appreciated by every connoisseur who wishes to offer exquisite chocolates.”
Letter to our clients, 1914
From its earliest days, the Maison wrote to its clients as one writes to friends, presenting each season’s creations — coffrets and bags with evocative names, such as the “Schéhérazade” box. Each was made by hand, some dressed in antique Chinese silks or old lacquer.
Once the chocolates were enjoyed, the box remained — on a chest of drawers, holding letters and keepsakes — handed down from one generation to the next.

1928 · Recognition
Among the great houses of Paris
In 1928, the Maison appeared in PAN, l’Annuaire du Luxe à Paris — the directory of the city’s finest houses, alongside the great names of haute couture.
Its page, a masked ball where boxes of chocolates pass from hand to hand, says it all: chocolate as an art of living, and the gift as a form of elegance. Its posters, drawn and lettered like engravings, proclaimed the Maison a chocolatier de grand luxe.
Chapter IV
The box rediscovered
A family dinner. A name was being sought for a new venture in chocolate. A father-in-law remembered a great-uncle, and a chocolate house in Paris… He opened a drawer and took out an antique box, stamped with the Maison’s name and kept with its original papers.
A century later, one carefully kept coffret brought a whole Maison back to life — the finest proof that Forrey & Galland boxes were made to last.
Fourey-Galland or Forrey-Galland in the archives, Forrey & Galland today: one Maison, one story.

Chapter V
Dubai, the renaissance
Reimagined in Dubai by Isabelle Jaouen and Vincent Moret, the Maison has returned to its first calling: marrying French savoir-faire with the flavours of the world. In the atelier, everything is made by hand, each morning, in small batches and with rare ingredients.
The spirit of fusion of 1912 now converses with the Orient: rose, Omani halwa, dates, pistachio and kunafa join ganaches and pralinés. And the art of giving continues, one coffret at a time.
