The story of this sweet creation goes back to the 17th century. The first version of the praline did not incorporate chocolate and was originally a whole nut coated in caramelised sugar.
Although the humble praline gained a lot of popularity, it lacked the rich flavours we know today. However, the second version of the praline was created from a culinary accident. A French chef accidentally added crushed nuts to a boiling pot of sugar and butter, melting this into a rich palate of flavours.
The chef soon refined this accidental recipe. He turned his concoction into a fine paste, using it as a filling for chocolates to create the French praline we know today.
